A Taste of Tradition: Authentic Paella Workshop at Casa Carmen

High in the hills of Chirche, a village known for its quiet charm and traditional Canarian architecture, Casa Carmen has become a destination for travellers seeking immersive culinary experiences. After previously attending their popular mojo workshop, the Canary Green team returned, this time to learn the art of making authentic Valencian paella.

Upon arrival, we were welcomed into Eric and Ave’s beautiful home, a space that feels both rustic and elegant. Casa Carmen has a warmth that makes you instantly comfortable, almost as if you’re stepping into the home of old friends. Nestled at a higher altitude, the air is cooler here, so bringing a light sweater is definitely a good idea.

Learning Paella the Traditional Way

The workshop began with an introduction to the roots of the true Valencian paella. Ave, who trained directly under a Michelin-starred chef in Valencia, shared her knowledge about the dish’s heritage, ingredients, and techniques. Divided into small groups, each team prepared its own paella from scratch, chopping, sautéing, and layering flavours exactly as tradition dictates.

Many of us were surprised by the ingredients used in genuine Valencian paella. They differ from the mixed versions commonly served in restaurants, and discovering the authenticity behind the recipe was part of the magic. As the pans simmered, Eric entertained us with stories about Canarian culture, local traditions, and the beautiful connection between food and island life.

A Meal Shared, A Moment Remembered

Once the paellas were ready, we gathered around the large wooden table to taste our creations. Served with a glass of local wine, the meal felt warm and communal, the kind of experience that transforms cooking into connection. Eric and Ave’s hospitality is what truly elevates the experience. They are kind, passionate, and genuinely committed to sharing the culinary culture of Spain and the Canary Islands in an authentic and joyful way.

Visiting Canary Islands on holiday doesn’t give you free rein to leave your values and principles at home. We encourage travellers to seek out sustainable options and keep up with environmental practices while travelling. Our top tips for a relaxed and wholesome stay include: 

  • Consider green transport options. Are you able to take a ferry to the island instead of flying? While you are here is a car necessary? Investigate public transport links or choose green options such as electric cars, green-hydrogen cars or e-bikes.
  • Choose destinations that value sustainability and choose green alternatives such as solar power, recycling and energy-efficient architecture. This extends to places that value workers’ rights and the impact on the local community.
  • Bring your own water bottle with you and refill it instead of buying single-use plastic bottles.
  • Make use of the recycling when out and about and don’t just throw your rubbish in the nearest bin.
  • Take advantage of local knowledge and immerse yourself in the culture through campaigns such as #Ilovecanarias and #meatfreemondaycanarias
  • Most of all, have fun and enjoy your time in the Canary Islands.
