Local Flavors of Fuerteventura: Indulge in Its Unique Specialties

Our Canary Green team is excited to take you on a flavorful journey through Fuerteventura! This beautiful island is full of delicious local specialties, including the famous goat cheese, mojo sauce, gofio flour, papas arrugadas (wrinkled potatoes), vine-ripened tomatoes, and even dishes made with aloe vera.

Our journey in Fuerteventura was an incredible experience of trying local products from Verdeaurora Bio Farm,  enjoying creative cooking at Land of Freedom and visiting Nature by Kuba.  

One of the highlights of our trip was visiting Verdeaurora Bio Farm where we were able to witness the organic cultivation of aloe vera, olive trees, and traditional fruits and vegetables. We had the opportunity to savor some of the best local produce the island has to offer, including dishes made with fresh, organic ingredients grown on the farm. The papas arrugadas with mojo sauce is a must-try Canarian dish that we couldn’t get enough of.

Here is the recipe for papas arrugadas and mojo sauce:

Ingredients:

  • 500 grams of small potatoes
  • 1 cup of coarse sea salt
  • Mojo sauce ingredients: 4 garlic cloves, 1 small chili, 1 teaspoon of cumin, 1 teaspoon of paprika, salt to taste, 1/4 cup of olive oil, and 2 tablespoons of white wine vinegar

Instructions:

  1. Clean the potatoes with cold water and place them in a pot, covering them with water.
  2. Add 1 cup of coarse salt and bring the water to the boil over high heat.
  3. Once the water is boiling, reduce the heat to medium and let the potatoes cook for 20-30 minutes or until they are tender.
  4. Drain the potatoes and let them rest for a few minutes until they are dry.
  5. Meanwhile, prepare the mojo sauce. Mash the garlic cloves with a mortar and pestle, then add the chili pepper and continue mashing. Add the cumin, paprika, and salt, then slowly pour in the olive oil while continuing to mash. Finally, add the white wine vinegar and mix everything together.
  6. Serve the potatoes with the mojo sauce on the side.

The local products are a true representation of the unique flavors and culinary traditions of Fuerteventura, and it’s a wonderful experience to be able to witness the farm-to-table process firsthand. Being able to see and taste the fresh produce in action is a fantastic way to connect with the local culture and appreciate the beauty of the Canary Islands
