Quesería Montesdeoca: A Zero-Waste Cheese Producer with a Canarian Heritage

We got to visit Quesería Montesdeoca, a family-run cheese producer! Operating since 1984 and now run by the third generation, the quesería has its roots in La Palma. That heritage is still very present today, especially in the way their cheeses are traditionally smoked using almonds from the island. But the best part is: it follows the principle of zero-waste!

Zero Waste as a Way of Thinking

Quesería Montesdeoca works with around 450 animals, mainly goats and sheep. The breeds used are indigenous to the Canary Islands and naturally adapted to the high-altitude conditions of around 600 meters, where the quesería is located. Cow’s milk is sourced from the greener, more humid north of Tenerife. A key element of their work is a circular farming system. The animals are fed a traditional Canarian diet that includes bananas from local plantations and beer by-products from nearby breweries. In return, animal waste is reused as natural fertilizer for banana plantations, closing the loop between agriculture and livestock farming. This approach significantly reduces waste and strengthens local supply chains making it a practical example of circular economy principles in action.

Sustainability at Quesería Montesdeoca goes far beyond milk production. We learned that:

  • No wax is used during cheese curing
  • Plant-based enzymes are used, making many cheeses suitable for vegetarians
  • Wool is reused by fashion designers or as insulation for houses

Together these choices show a mindset where nothing is treated as disposable.

Tasting the Result of This Philosophy

The quesería produces 19 different types of cheese, ranging from fresh to long-aged varieties. During the tasting, we tried several of them from queso fresco aged just 24 hours to more mature cheeses. In true Canarian style, we learned the saying that “cheese and banana together are like a kiss”. We tasted different cheeses paired with local jams, including one made with banana and mango, accompanied by Canary Island wine.

Tradition That Reaches Beyond the Island

Quesería Montesdeoca produces around 200 kg of cheese every day, yet everything still feels deeply personal and hands-on. Their smoked cheese has become their most awarded product. During our visit, we also learned that the Quesería Montesdeoca is now the most awarded in Spain, with additional prizes from France and Germany, including a Super Gold award which is the highest distinction. Despite this growing international recognition, the focus remains firmly on local roots and long-term responsibility.

Visiting Quesería Montesdeoca showed us how traditional food production can support sustainability, preserve cultural heritage, and strengthen local food systems — one cheese at a time.

Visiting Canary Islands on holiday doesn’t give you free rein to leave your values and principles at home. We encourage travellers to seek out sustainable options and keep up with environmental practices while travelling. Our top tips for a relaxed and wholesome stay include: 

  • Consider green transport options. Are you able to take a ferry to the island instead of flying? While you are here is a car necessary? Investigate public transport links or choose green options such as electric cars, green-hydrogen cars or e-bikes.
  • Choose destinations that value sustainability and choose green alternatives such as solar power, recycling and energy-efficient architecture. This extends to places that value workers’ rights and the impact on the local community.
  • Bring your own water bottle with you and refill it instead of buying single-use plastic bottles.
  • Make use of the recycling when out and about and don’t just throw your rubbish in the nearest bin.
  • Take advantage of local knowledge and immerse yourself in the culture through campaigns such as #Ilovecanarias and #meatfreemondaycanarias
  • Most of all, have fun and enjoy your time in the Canary Islands.
